Color Your Way to Good Health!
Ingredients:
1 large avocado,
2 TBSPs of finely chopped onions
1/2 cup of chopped cherry tomatoes
1 TBSP of very fine carrot slivers/slices
1/4 cup of baby arugula greens for each half
1 Tsp of olive oil and vinegar
Directions:
Cut the avocado in half. Then, cut out the filling until you are left with two halves of the avocado skins, now shaped like cups. Fill each "avocado cup" with an equal amount of onions, chopped avocado chunks, tomatoes, carrot slivers, baby arugula leaves, and dab on the dressing on top! Enjoy BOTH halves!
My avocado cup is loaded with all kinds of healthy nutrients and vitamins: magnesium, vitamin D and C, and fiber!
