Color Your Way to Good Health!

Good news, Bee Fitters! According to Women's World, there is research from Harvard stating that if you have a family history of cancer, you can cut your risk by 32 per cent or more just by eating a variety of bright colored fruits and vegetables. Carotenoids, the pigments that make kale green, oranges and carrots orange and tomatoes red, are responsible for helping break down harmful toxins in the body before they can wreck havoc on our cells. You don't have to prepare a big meal to get in your daily requirement of rich colored fruits and vegetables. Try making a simple stuffed avocado for a healthy appetizer or snack. Here's the recipe, modified from the Meatless Cookbook: From the Kitchens of Martha Stewart Living.


1 large avocado,

2 TBSPs of finely chopped onions

1/2 cup of chopped cherry tomatoes

1 TBSP of very fine carrot slivers/slices

1/4 cup of baby arugula greens for each half

1 Tsp of olive oil and vinegar


Cut the avocado in half. Then, cut out the filling until you are left with two halves of the avocado skins, now shaped like cups. Fill each "avocado cup" with an equal amount of onions, chopped avocado chunks, tomatoes, carrot slivers, baby arugula leaves, and dab on the dressing on top! Enjoy BOTH halves!

My avocado cup is loaded with all kinds of healthy nutrients and vitamins: magnesium, vitamin D and C, and fiber!
