Color Your Way to Good Health!
1 large avocado,
2 TBSPs of finely chopped onions
1/2 cup of chopped cherry tomatoes
1 TBSP of very fine carrot slivers/slices
1 Tsp of olive oil and vinegar
Cut the Avocado in half. Then, cut out the filling until you are left with two halves of the avocado skins, now shaped like cups. Fill each “avocado cup” with an equal amount of onions, chopped avocado chunks, tomatoes, carrot slivers, and dab on the dressing on top! Enjoy BOTH halves!
