Charred Mahi with Shiitake-Caulflower Topping

 

To prepare fish: marinate mahi-mahi fillets for one hour in mixture of lemon juice and olive oil. Season with pepper. Cook for 30 seconds each side on high heat on barbeque grill to char the surface.
